That explains the number of Chinese restaurants in America.
But it doesn’t explain why Chinese food is completely different on the west coast and east coast.
It doesn’t make a difference if it was the Chinese, the Celts or Vikings. After Columbus you have a continuous, permanent interaction which is the only one that truly matters historically.

If China really had a history of ocean exploration, wouldn’t we have evidence of them also sailing to Africa, India, Australia, and a bunch of Polynesian Islands?
